My friends, I am sorry for my absence but I have been up at my camp, celebrating Christmas you know. Anyways, what I wanted to say now was that I am going to take a break from blogging until school starts up again. I have so much to do so I need to have one less thing to worry about right now. But, I'll be back on January 10th again! Until then, have a good one and eat lots of icecream.

Today I've been making Christmas presents all day. It is such a hassle to come up with ideas for it, but when that happens I LOVE all of it! When Mum came home she started making all the Christmas food and stuff. Right now she's making saffron biscuits and some sort of chocolate hazelnut fudge! It smells absolutely delicious around here! I really have the the Christmas feeling going on now! I hope you are too!

roasted sugar coated almonds
3 dl confectioner's sugar
1 dl confectioner's sugar for separating almonds
1. Let almonds boil in a saucepan for a few minutes, pour into a strainer and remove peel.
2. Melt confectioner's sugar and almonds in a pan until you hear a popping noise. Stir the entire time.
3. Remove from heat and let cool for a minute or so.
4. Powder confectioner's sugar over the almonds, mix, put on a big baking plate and separate them from each other.
5. Let cool completely and put in paper cones!

This summer when my family and I had our roadtrip across, around and through the USA we were, obviously, in New York City and lived in an apartment in Williamsburg. Williamsburg is a part of Brooklyn, it was such a cute little neighborhood, only a few minutes from Manhattan. I don't want to get all psyched or get my hopes up, even though that's probably too late already, but you know that New York trip I told you about? The one that two of my friends and I are planning to make. Well the apartment hunting might actually just have taken a step in the right direction! All I can say is that I wouldn't mind visiting Williamsburg again.

strawberry rhubarb pie
I made this pie last summer from fresh strawberries and rhubarb. It came out so well, there's not really anything special about it, but I think it was the mix of summer and everything that made it so wonderful. You can probably not make it right now, but I'll put the recipe here anywas, for future reference you know.
3 tbsp sugar
1.5 dl wheat flour
1.5 dl rolled oats
Filling:
400 g rhubarb sticks
0.5 litre cut up strawberries
1.5 dl sugar
1.5 tbsp potato starch
1. Preheat oven to 225 degrees celsius.
2. Melt butter in a saucepan. Add sugar, flour and oats and stir.
3. Cut up the rhubarb nicely and mix with strawberries, sugar and potato starch in separate bowl.
4. Spread the filling in a pie tin. Sprinkle the pie dough like crumbs on the filling.
5. Bake for approx 15-20 minutes.
6. Let cool before serving.

I got a question why I quit dancing, so I thought I'd answer that. When I went to America I wanted to keep up my dancing, and I did. For a little while. I started taking dance classes at a place called the Thomas School of Dance. It was ridiculously expensive but all worth it. I had to audition to get into the classes I wanted, which was kind of scary. But I got into the advanced ballet class, a performance dance class and a modern dance class. I was even put as an understudy in their annual ballet show, with pointe shoes and all. I had classes several times a week and it was so much fun and I learned so much.
But my organization got all crazy and made me choose between dancing and running when I moved to my new host family. And I had to choose whatever my host sister was doing (pretty weird request if you ask me, it left me with no choice really), which was running, so that's how I got all into running.
One might wonder why I didn't picked up dancing when I got back but I didn't for a lot of different reasons. Firstly, my old dance school here in Sweden went bankrupt. Secondly, all of my friends that I used to dance were all gone and that meant it wouldn't be any people in my age. And I have absolutely now time left for dancing now when I have school, work and all this working out for my super mega senior project I have to do too. I am seriously
deprived from not dancing, because I love it so much! I miss it a lot. Oh well, maybe I'll pick it up some day again, or I'll just have to be satisified with the dance offs my sister and I have from time to time in our kitchen...

chocolatey banana oatmeal with hazelnuts
1.5 dl rolled oats
2.5 dl water
2.5 tbsp cocoa powder
1 whole banana
1/2 dl hazelnuts
1. Let oats and water boil for a couple minutes until wanted consistency.
2. Mix banana, cocoa powder and chopped hazelnuts.
3. Mix with oatmeal.
4. Serve with milk!

This year my family, my grandmother and I are celebrating Christmas at our camp up in the mountains, in Kittelfjäll. I think it's going to be so cozy and nice and christmasy...and just all plain lovely. I can't wait. We'll open presents, eat us full with Christmas food and candy, play in the snow, drink hot cocoa with marshmallows, watch Donald Duck's Christmas, snuggle in front of the fire, go downhill skiing, play board games and hike. I am beyond excited.
We bought this camp this summer. We've gone here for I don't even know how long. At least since the year 2004. During Fall Breaks, New Year's Eves and Spring Breaks. So we kind of have a history with this little cabin. However, when we bought it we did a total makeover to it. As you probably can see right here. If it isn't obvious already, the left column is the before pictures and the right one is the one with the after pictures.
chocolate chip walnut brownies
These brownies are a mouthful of heaven. The ginger mixed with the chocolatey flavor gives it a nice little unexpected touch. They are so scrumptious it's ridiculous.
350 g soft butter
6 dl sugar
3 dl cocoa powder
1 dl golden syrup
0.5 tsp salt
6 eggs
3 dl wheat flour
400 g white baking chocolate
300 g walnuts
1. Preheat oven to 175 degrees celsius. Grease a big pan, approximately 40x50 cm.
2. Cream together butter an sugar until white and fluffy.
3. Mix in cocoa, syrup and salt.
4. Beat in one egg at a time. Last, stir flour into batter and mix until nice and even.
5. Chop chocolate into pieces and mix with batter and add walnuts.
6. Pour into pan and bake for 15-25 minutes or until knife inserted in center comes out clean.
7. Let cool completely before spreading on fudge glaze.
FUDGE GLAZE
3 dl heavy cream
1 dl milk
1 dl golden syrup
1 tsp ground ginger
400 g dark chocolate
1. Combine heavy cream, milk, syrup and ginger in saucepan and let boil for only a minute. Remove from heat.
2. Chop chocolate into pieces and add to glaze, stir until melted.
3. Spread glaze on brownies. Let cool in fridge before cutting into pieces.

I am back on track again my friends. Friday came to be the only day I went to school this week. Now, please take a deep breath before I say what I am about to say. I don't know what's wrong with me but I was kind of excited about it. I hade four classes in a row today, no lunch, just strictly school for five whole hours. You'd think I would want to kill myself after that but, as previously said, I don't know what's wrong with me. When I came home I picked up where I left off in math class and I've been sitting here struggling with numbers since I got out of school two hours ago.
Maybe I'm still sick after all?

Anyways I am planning on going back this summer with two of my friends to New York. For a whole month. Just to hang out. Can you believe that?! We're going to live in New York City for a whole month just for fun! Live like real new yorkers. Go to unknown cafés, go for long runs through Central Park, find unique clothes at small second hand shops, eat cheap Ben & Jerry's icecream, go and see Broadway Shows and watch old black and white movies on rainy days just because we can. I am beyond excited for this.

When I left for America I spent the first three days in New York City with a bunch of other exchange students from Sweden, Norway and Denmark. We stayed at a really nice hotel close to Newark but every day we were actually in the city. We saw every freggin tourist attraction there is. The statue of Liberty, Central Station, Rockefeller Center, the Brooklyn Bridge, Times Square, Chinatown, Soho, Little Italy, the Manhattan Skyline, Ground Zero, Greenwich Village (where we saw the building from the tv-show Friends!), Central Park and everything else in NYC. It is pretty exhausting being a tourist I must say. Anyhow it was great because after doing all the touristy stuff we were free for the afternoons. So we would go shopping on Fifth Avenue, have a coffee from Starbucks and blah blah blah. You know. Anyways it was fun seeing a little about how Americans are. And that is that they are all so nice. So different from Swedish people. Americans actually greet you when you for an example walk into a store or when you are about to buy something they actually talk to you. It's a nice little change I have to say.
