breathtaking bran bread bliss

I made this bread last night as a prep for the coming week up in the mountains. Full of fibers and seeds and other scrumptious things. You'll stay full forever. I promise.


50 g yeast
8 dl water
1 pack (500g) wheat bran
1 dl crushed rye
8 dl wholewheat spelt flour
1 dl crushed flax seeds
1/2 dl psyllium seeds
1 tbsp honey
2 tsp salt

1. Heat water to 37 degrees celcius. Crumble yeast into a big bowl. Add salt and honey.
2. Dissolve yeast with water when it has reached the right temperature. Add wheat bran, flour, rye and seeds.
3. Knead for 5-10 minutes. The dough is supposed to be sticky when you're done so don't add more flour if it all messy.
4. Put a baking sheet in a big roasting pan. Pour the dough (batter..) in the pan and pull it all the way out to the edges. It is supposed to cover the whole pan.
5. Cut into pieces, brush with some cold water and sprinkle som wheat bran on top. Let rise for 40 minutes under a a piece of cloth.
6. Now, preheat oven to 225 degrees celcius. Bake bread in the oven for 20 minutes when finsihed rising. Let cool on a rack. Eat!
