couscous with brie cheese and chanterelles



After running for 80 freaking minutes you are pretty hungry to say the least. So, I made THIS for lunch today! I love cooking and making up new dishes and such. To just use what you have at home and make the best out of it is kind of fun, I think... Today I used every single green vegetable we had in our freezer for one part of the dish and then a little bit of this and a little bit of that for the other part. You know what, it came out so well and it only took like 20 minutes to do it! When I eat lunch I rarely eat any kind of meat. I want it to feel fresh, and what other way to do that than pretty much only have veggies on your plate?

COUSCOUS WITH CHANTERELLES AND BRIE CHEESE

2 dl couscous
2 dl water
1 tbsp canola oil

2 dl chanterelles
1 apple cut into pieces
3/4 dl raisins
1/2 brie cheese cut into pieces

1. Bring water to a boil and remove from heat. Instantly add couscous and oil and let set for a few minutes.
2. Sauté chanterelles in butter for a few minutes until they have a lovely golden brownish color.
3. Add apple pieces to the chanterelles and let sizzle for a few more minutes.
4. Mix couscous, chanterelles, apple pieces, raisins and brie cheese in a separate bowl. DONE!

VEGGIEMIX

broccoli
asparagus
spinach
soy beans
leek
tomato

Simply mix everything together in optional amounts. Fry in a pan for approximately 10 minutes until gooey and golden brown. Add some salt and pepper to it. Serve!
